Peanut Butter Overnight Oats – Hiking Style

Peanut Butter Overnight Oats Recipe

Traditionally porridge is considered a breakfast meal however this recipe can double as lunch or dinner depending on your taste. This is one of the few meals that I continue to eat year on year if not so much as I did before. Preparation is really simple with the meal being ready to eat within about two hours of adding water to the ingredients

Serves: 1

Approximate serving (dry weight): 115g

Approximate calories/serving: 505

 

Ingredients

½ cup                          Rolled Oats

10 grams                     Freeze dried fruit (Mango or Strawberry is my personal choice)

¾ tablespoon            Chia seeds

1 tablespoon               Milk power (Full cream milk)

2 tablespoon              Peanut Butter

½ teaspoon                Coconut Flower sugar (adjust to taste)

¾ cup                          Water

 

Preparation Instruction

  • Add all dry ingredients to a 500g (18oz) Peanut Butter jar. This can be prepared in advance of the trip and stored in zip lock bags
  • When ready add water and peanut butter, close lid and shake vigorously for 10-15 seconds
  • Wait at least 90 minutes to allow the dry ingredients to rehydrate before eating
  • Stir before eating to mix the peanut butter through
