Tropical Overnight Oates Recipe

While porridge is typically considered a breakfast meal it can however be eaten at anytime of the day but I would suggest not just before you go to bed as it is likely to be a bit heavy.  As much as I love the Peanut Butter Overnight Oats on long trips I need some variation. This tropical version has almost as many calories but a very different flavour to the peanut butter version. Preparation is really simple with the meal being ready to eat within about two hours of adding the water so if this is going to be breakfast meal add the water just before you go to bed.

While you can use desiccated coconut in this recipe coconut flakes provides a better textural experience

Serves: 1

Approximate serving (dry weight): 125 grams

Approximate calories/serving: 453 calories

 

Ingredients

½ cup                          Rolled Oats

10 grams                     Freeze dried Mango

¾ tablespoon              Chia seeds

1 tablespoon               Coconut Milk Powder

2 tablespoon              Coconut Flakes

2 tablespoon               Dried Pineapple pieces-diced

½ teaspoon                 Coconut Flower sugar (adjust to taste)

¾ cup                          Water

 

Preparation Instruction

  • Add all dry ingredients to a 500g (18oz) Peanut Butter jar. This can be prepared in advance of the trip and stored in zip lock bags
  • When ready add the water, close lid, and shake vigorously for 10-15 seconds
  • Wait at least 90-120 minutes to allow the dry ingredients to rehydrate before eating
  • Stir before eating to mix the ingredients through
