Pearl Couscous with Vegetables

This is one of my favourite lunches particularly for longer hikes. Prepared in the morning after breakfast this meal is ready to eat 90 minutes later and helps provide those ‘greens’ that many hikers often crave.

Serves: 1

Approximate serving (dry weight): 82 grams

Approximate calories/serving: 461 (depending on vegetables used)

Ingredients

1/3 cup                                      Pearl couscous

1/4 cup                                      Dehydrated vegetables – your choice

1/2 teaspoon                              Dried onion

1/8  teaspoon                              Dried chilli

1/2 teaspoon                              Garam Masala

 

1 tablespoon                            Olive oil

½ cup                                        Water

Preparation Instruction

  • Combine all dry ingredients in a clean/empty 500 gram (18 oz) peanut butter jar. This can be prepared in advance of the trip
  • When ready, add water and olive oil, screw on the lid and shake vigorously for 10-15 seconds
  • Allow for at least 90 minutes to rehydrate before eating
